The Food Chronicles: Beef Goulash
This week on "The Food Chronicles," Kevin Sloan will be getting ready for stew season with his take on German goulash. The Food Chronicles, a cooking series by Chef Kevin Sloan, is brought to Milwaukee through partnerships with Potawatomi Casino & Hotel and Educators Credit Union. Sloan shares his favorite beef stew recipes and stories behind them, drawing inspiration from his 30-plus years in professional kitchens, extensive travels, and 15 years preparing memorable meals for artists performing at Milwaukee venues managed by the Pabst Theater Group. The German version of the dish is almost identical to a true Hungarian version, using a thicker sauce to coat the stew meat and vegetables. For a starchy side, Sloan suggests adding oven-roasted fingerling potatoes and German dumplings like spaetzle. The recipe takes about an hour and two hours to get to the tenderness of the meat.
